Crockpot Chicken and Dumpling Soup 4 skinless, boneless chicken breasts; cut into chucks and seasoned 2 T. butter 2 small cans of condensed cream of chicken soup 2 carrots, peeled & chopped 1 onion, diced 1 stalk celery, washed well and chopped 1 chicken bouillon cube 1 ½ tsp. salt 1 ½ tsp. pepper 1 (15 ounce) packages refrigerated biscuit dough, torn into pieces 1 small bag of frozen peas 1 cup shredded extra sharp cheddar cheese Place the chicken, butter, soup, carrots, celery, onion, bouillon cube and seasoning in a crock pot. Fill the crock with enough water to cover. Stir gently. Cover. Cook for 6 to 7 hours on High, or 10 to 12 hours on Low. ** 45 minutes before serving, put the frozen peas, cheese, and torn biscuit dough in the crock pot. Cook until the dough is no longer raw in the center. Add milk if you want a thinner consistency. I like my cream soups thick and creamy. ** Here is my homemade dumplin recipe that I use of my grandmothers, you can easily do with this recipe.... 2 cups of flour 2 tsp baking powder 2 eggs, beaten lightly
I didn’t follow any recipe for this one. I threw in a little of this, and a little of that. We ended up having last minute company, and he loved it. My husband and guest said it was awesome for being “thrown” together. Great hearty meal for a cold night. Enjoy!! Crock Pot Chicken and Potatoes 4 pieces of boneless skinless chicken breast; rinsed and cut in halves I used 4 Red Potatoes; skin left on and cut in small chucks 1 pint of my canned carrots (You can use fresh carrots, or store bought canned also) ¼ cup of green peppers; sliced ½ small onion; sliced fine ¾ cup chicken broth ¼ cup water Salt Pepper Italian Seasoning Paprika Chicken Seasoning Spray your crock pot with non stick cooking spray. Then put in water and chicken broth. I used my 3 qt. crockpot, but any will do. Slice up onions and peppers. Set aside. Cut potatoes into chucks and place in a large bowl. Place in half of the chopped onions. Coat well with Italian seasoning, paprika, salt and pepper. Stir and sprinkle as much as needed until potatoes are coated. Dump into crockpot. Place peppers, carrots, and the rest of the onions on top of potatoes and give a light stir. Place chicken on top of veggies. Then sprinkle chicken seasoning on your chicken. (Or you can just use salt and pepper.) Or both! It’s whatever you prefer. Cook on High for-4-5 hours. (Or low for 6-8 hours) *I topped each piece of chicken with a small piece of cheddar cheese right before we sat down to eat. *
