Key Lime Tarts (Dairy & Gluten Free) Store in the fridge or freezer. Serves: 12 Ingredients Crust: 1 cup unsweetened coconut, shredded 1 cup walnuts ½ cup pitted dates (soaked in warm water for 30 minutes) Filling: 2½ firm avocados ¼ cup fresh lime juice 1 teaspoons lime zest ¼ cup raw honey 4 packets stevia (optional) Instructions Grease a 12-muffin tin, set aside. Place the coconut and walnuts in a food processor. Blend until coarsely ground. Add the dates and process until the mixture begins to stick together. Press about 1½ tablespoons of the mixture into the bottom of each cup, about ¼ full. Process all filling ingredients in a food processor until smooth. Pour 1 heaping tablespoon of the filling into each muffin cup. Smooth the top. Garnish with a fresh slice of kiwi or a very thin slice of lime. Freeze for 30-60 minutes to set. Enjoy! Date Caramel! I have been meaning to post this recipe for a while! It is so simple to make, a vegan recipe and a great tasty alternative to the original high sugar + additives original. You can use this as a topping to porridge, in parfaits, in homemade chocolate, cakes and bakes, with fruit, mixed into yogurt...the possibilities are endless! This is my quick 15 minute version but if you want to make it raw, just soak the dates overnight in cold water. If you want to make a large quantity you could also use a food processor or blender. . . 👉 Simply take stones out of the dates (you can use any quantity you would like...I only used around 10), place in a small bowl and cover with boiling water. Leave to soak for at least 10 minutes then drain (keeping the drained water). Add cinnamon and salt if desired before mashing. Slowly add in the preserved water (enough as needed), mashing until a caramel consistency is achieved. This will keep in the fridge in a sealed sterile jar for around 5 days.
