Serves 6 * 1 sheet puff pastry * 200g/7oz antipasto mix (can be found from at most supermarkets) * 3 eggs * 300g/10oz sour cream Preheat the oven to 200 ̊C/400F. Line a nonstick 20c/9inch square ovenproof dish with baking paper, then with puff pastry. Sprinkle with antipasto mix. In a bowl, beat the eggs and mix in the sour cream. Pour over antipasto and season with sea salt and cracked pepper. Bake for 30 minutes or until golden and set. Note: You can make mini-tart versions in muffin trays and they are great lunch box fillers. Leftover Tip: This is such a versatile recipe, fill it with whatever vegetables and proteins your family will eat, it’s a great way to use up leftovers. Time to share a gloriously simple but very tasty recipe from 4 Ingredients Diabetes. Salmon Patties: Serves 4 * 2 Eggs * 2 x 150g/5.2oz zucchini's (grated) * 1 x 130g/4.5oz turnup peeled and grated (can swap for carrot or parsnip) * 1 can (420g) pink salmon, drained and flaked (or tuna) Into a large bowl, place all the ingredients and season with cracked pepper.
