Fill the crock with enough water to cover. Stir gently. Cover. HONEY SAUCED CHICKEN & RICE 3/4 pound chicken (of your choice) 1/2 tsp. salt 1/4 tsp. black pepper 1/2 cup honey 1/4 cup soy sauce 1/8 cup chopped onion (or 1/16 cup onion flakes) 1/8 cup ketchup 1 Tbs. vegetable oil 1 clove garlic, minced 1/4 tsp. red pepper flakes 1. Season both sides of chicken with salt and pepper, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken. 2. Cook on LOW for 3 hours OR on HIGH 1 1/2 hours. Chicken into bite size pieces, then return to pot and toss with sauce. Serve over brown rice

Roast Chicken is super easy in a crockpot, and this spicy version has lots of yummy flavour. WHOLE ROAST CHICKEN 2 teaspoons salt 2 teaspoons paprika 1 teaspoon cayenne pepper 1 teaspoon onion powder 1 teaspoon thyme 1 teaspoon white pepper 1/2 teaspoon garlic powder 1/2 teaspoon black pepper 1 large roasting chicken (with pop-up timer if possible) 1 cup chopped onion (optional) 1. In a small bowl, combine the spices. 2. Remove any giblets from chicken and clean chicken. 3. Rub spice mixture onto the chicken. 4. Put chopped onion in bottom of crock pot. 5. Add chicken. No liquid is needed, the chicken will make it's own juices. 6. Cook on low 4-8 hours. If possible use a pop-up timer in the chicken because some crock pots cook faster/slower than others (my crock pot cooks this recipe in 4-5 hours). Summer means *trying* to eat healthier dinners, and this Southwestern chicken looks so mouth-watering! I think this would be super with a simple side of rice and salad. SOUTHWESTERN 2 BEAN CHICKEN 4 raw, boneless, skinless chicken breasts (about 8 oz. each) 1 (15 ounce) can pinto beans (rinsed and drained) or 1 1/3 cup home cooked beans 1 (15 ounce) can black beans (rinsed and drained) or 1 1/3 cup home cooked beans 1 (28 ounce) can diced tomatoes in juice, low sodium is best 1 pound frozen and thawed corn 1 (12 ounce) jar of your favorite salsa, no sugar added 1.Place the chicken breasts on the bottom of your slow cooker. Pour the tomatoes and salsa over that and then layer on the beans and corn. 2.Cook on low for 5-7 hours, or until the chicken easily falls apart when the pot is stirred.

Lots of you seemed to love the clean chicken recipes I've put up recently - so here's a new one to try. Simple, delicious and perfect for tacos with the whole family. Yum! CLEAN EATING MEXICAN CHICKEN (Makes 8 servings) 3-4 tablespoons clean eating taco seasoning (see below for details) 4 large chicken breasts 1 cup clean, low sodium chicken broth or stock 1.Place all ingredients in a slow cooker and stir until the chicken breasts are well coated in the spices. 2.Arrange the chicken breasts in such a way that they are as close as possible to being a single layer. 3.Cook on low for 6-8 hours depending on your slow cooker. 4.If you are home, flip the chicken half way through its cooking time and arrange it into a single layer. 5.The chicken is done when it easily falls apart CLEAN EATING TACO SEASONING This is great for seasoning all kinds of meat and chili without worrying about added salt, MSG or preservatives. 2 tablespoons ground cumin 1 teaspoon paprika 1/2 teaspoon cayenne pepper 1/2 teaspoon onion powder 1/2 teaspoon garlic powder 1/4 teaspoon black pepper 1/4 teaspoon chili powder 1.Blend all spices in a bowl and use to season any taco meat you are cooking. Use approximately 1 tablespoon per pound of meat. N ote: This mix has a small amount of “kick” to it. Nothing that will set your mouth on fire, but definitely noticeable. If you want something without the kick, leave out the cayenne and add an extra 1/2 teaspoon of paprika.

Short of time in the morning? Prep this delicious Chicken & Tortilla Stew the night before & simply store in the fridge in your slow cooker’s removable dish. Then when you leave in the morning, just put the insert in the slow cooker and head out the door! CHICKEN & TORTILLA STEW (CLEAN EATING) 1 1/2 lb. (680 g) raw chicken breasts 1 (12 oz.) jar of your favorite clean salsa 1 pound (454g) frozen corn, thawed 1 pound (454 g) frozen, mixed bell peppers 3 organic, corn tortillas, ripped or shredded by hand Olives and yogurt for garnish (optional) 1.Place the chicken in the bottom of the pot, and pour everything else over it. (Cover and store in the fridge overnight if needed) 2.Place pot/insert in your slow cooker and cook on low for 8-10 hours. 3.Note that the tortillas will not look very pretty after cooking. But they do add a nice flavor. 4.When cooking is finished, simply use a wooden spoon to stir everything up and break apart the chicken. 5.Serve garnished with some sliced, black olives and/or a dab of plain yogurt.
