5 Ingredient Balsamic Chicken By @wwfoodblog 1 chicken breast 1/2 cup canned crushed tomatoes (or largely diced tomatoes) 1/4 cup onion, sliced or diced 1 tbsp balsamic vinegar Salt/pepper and italian seasoning (can substitute garlic powder, oregano and dried basil) Heat up a nonstick skillet over medium heat. Season both sides of chicken with salt, pepper and italian seasoning. Using cooking spray, grill the chicken for about 3-4 minutes on each side or until it's browned on the outside and mostly cooked through. Add tomatoes, onions and balsamic vinegar and lower heat slightly. Cover and allow to simmer for 5-7 minutes, flipping chicken often. Uncover and cook for 5-7 more minutes or until sauce thickens a little. Serves 1 - serve over quinoa, brown rice, or whole wheat spaghetti!

On my way to attend a supplementary course in food safety, very interesting and definately well needed now that I'm in the food industry😃. The invitation mentioned that we will have a break and they will serve cinnamon rolls and coffee....No thank you 😏, I'll stick to my plan and prepared my own lunch: Creamy zucchini noodles with tuna and sundried tomatoes 😋 1. Use a spiralizer to make the zucchini noodles. I don't cook them. 2. With a hand blender, mix 1/3 cup plain greek yogurt, 1-2 sundried tomatoes, 1/4 clove of garlic, salt & pepper. 3. Add tuna and dressing to the noodles and mix until combined. Enjoy!
