SKILLET CHICKEN FAJITAS Made by @reciperunner . Follow her @reciperunner Ingredients For the Chicken Fajitas 1 pound Chicken Breasts, sliced thinly 2 tablespoons fresh cilantro or parsley if you don't like cilantro 2 teaspoons extra virgin olive oil 1 teaspoon dried oregano 1/2 teaspoon hot sauce (optional) 1/2 teaspoon chili powder 1/2 teaspoon kosher salt 1/4 teaspoon garlic powder 1/4 teaspoon ground cumin Juice of half a lime For the Peppers and Onions 2 teaspoons extra virgin olive oil 1 red bell pepper, thinly sliced 1 yellow bell pepper, thinly sliced 1/2 of a yellow onion, thinly sliced 1 teaspoon chili powder 1/2 teaspoon kosher salt . Instructions In a large bowl combine all of the chicken fajita ingredients minus the lime juice and the pepper and onion ingredients. Toss the thinly sliced chicken in the marinade until coated, cover, and refrigerate for 15-30 minutes. Preheat a 12 inch cast iron skillet over high heat with 2 teaspoons of the oil. When the skillet is hot add in the sliced peppers, onion, chili powder, and 1/2 teaspoon of salt. Saute the peppers and onions for about 4 minutes or until they are golden and have softened slightly. Remove the peppers and onions from the skillet onto a plate and set aside. Add another 2 teaspoons of oil to the hot skillet. Add in the chicken fajita mixture and saute until the chicken is cooked through and no longer pink. Add the peppers and onions back into the skillet along with the juice of half a lime. Cook everything for another minute then serve immediately. Serve the fajitas in lettuce cups or on tortillas and top with pico de gallo if desired.

By @BareFeetKitchen❤️@BareFeetKitchen . 4 strips of bacon, cut into 1-inch pieces 1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces 1/2 teaspoon cornstarch 1/4 tsp each kosher salt and pepper 3/4 cup chicken broth zest from 1 lemon, about 1 tablespoon minced juice from 1 lemon, about 1/4 cup 8 large basil leaves, about 2 tablespoons finely sliced 1 cup grape tomatoes, halved For serving, choose one: 3 raw medium-size Italian zucchini, spiralized or julienned 8 ounces angel hair pasta, cooked 2 cups Jasmine rice, cooked Heat a large stainless skillet over medium heat and cook the bacon. While the bacon is cooking, sprinkle the cornstarch, salt, and pepper over the cut up chicken. Remove the cooked bacon from the pan with a slotted spatula and drain on a paper towel lined plate. Drain the grease from the pan, leaving 2 tbsp in the pan. Place the hot pan back over medium heat and spread the chicken across the pan. Let it cook without stirring for 2 minutes. Turn the chicken pieces over just until cooked through. Remove the chicken to a plate or bowl. Add the chicken broth, lemon juice, and lemon zest to the skillet and bring to a simmer. Cook for 3 minutes. Stirring occasionally and scraping the browned bits off the bottom of the skillet as it cooks. When the sauce has thickened slightly, add 1 tbsp butter and basil. Taste and add more salt and pepper, only if needed. Add the chicken and tomatoes to the sauce. Serve the zucchini noodles, pasta, or rice topped with the chicken and sauce. Sprinkle each serving with the cooked and crumbled bacon. Enjoy!

For Chicken: 2 chicken breasts, pounded into 4 cutlets sea salt freshly ground pepper garlic powder 8oz soft goat cheese, room temp 1½ cups chopped spinach Preheat oven to 400 degrees and place rack in upper third of oven. Make cutlets by cutting breast in half width wise, placing between plastic and pounding with a rolling pin till chicken is about a ¼ inch thick. Season one side with lightly with sea salt, pepper and garlic powder. Turn seasoned side down and use a spatula to spread soft goat cheese on unseasoned side. If goat cheese does not spread easily, it's ok. The cheese will spread out as it cooks. Top each cutlet with chopped spinach. Roll up chicken breast and stuffing and place seam side down on parchment covered rimmed cookie sheet. If you can, place all chicken to one side of cookie sheet leaving room to add asparagus later. Place in oven and cook for 35 minutes. If chicken breast are really large you may need to cook 5 minutes longer. While chicken cooks prepare cream sauce and asparagus. Sundried Tomato, Spinach, and Cheese Stuffed Chicken By @yammiesnoshery❤️@yammiesnoshery Two large chicken breasts 3/4 cup Sun Dried Tomato Vinaigrette Dressing (salt and pepper and olive oil work too) 1/2 cup sundried tomatoes 1/2 cup roughly chopped spinach 1/2 cup feta cheese 1/2 cup mozzarella cheese Marinade the chicken breasts in the dressing for a few hours. With a large sharp knife, carefully cut the chicken breasts like hot dog buns. Don't cut all the way through. Open the chicken breasts up where you cut them and layer on the remaining ingredients. Stick a couple of toothpicks in near the opening to keep it all together. Heat up a pan (I used a cast iron skillet) and sear the meat on both sides. You can lower the heat and continue cooking the meat on the stove until it's done or, if you're using a cast iron skillet, you can put the pan in the oven at about 375ºF. You could also just completely cook it in the oven on a baking sheet if you don't feel like searing it. Just make sure you cook it until the center reaches 165ºF on a thermometer.
