Cookies & Cream Brownie Cheesecake Bars Serves 10-12 INGREDIENTS 1 box brownie mix, prepared according to package instructions 24 ounces cream cheese, softened ¾ cup sugar 2 eggs, beaten 1 tablespoon vanilla extract 36 chocolate sandwich cookies PREPARATION Preheat oven to 325°F/165°C and grease a 9x13 baking pan. Prepare the brownie mix in a bowl. In a separate bowl, mix together the cream cheese and the sugar until there are no lumps. Add the egg and vanilla, stirring until evenly combined. Spread the brownie batter in an even layer on the bottom of the pan. Place 24 of the sandwich cookies in a single layer on top of the brownie batter. To fill in the edges, cut 6 of the cookies in half and nudge those in. Pour the cheesecake batter on top, spreading it evenly over the cookies. Crush the remaining 6 cookies and sprinkle on top of the cheesecake batter. Bake for about 45 minutes, until the edges are slightly golden brown and the middle is slightly jiggly. Cool and chill for at least 2 hours.

Tornado Potatoes Serves: 2 INGREDIENTS 2 medium white potatoes 4 tablespoons butter, melted 1 cup parmesan cheese, grated ½ teaspoon black pepper 1 tablespoon garlic powder 1 tablespoon paprika 1 teaspoon salt Parsley, chopped (for garnish) PREPARATION Preheat oven to 325ºF/160ºC. Insert a skewer into the potato and gently push the skewer all the way through it. Hold a sharp, thin knife at an angle and cut in the opposite direction you are turning the skewered potato. Gently fan out the potato down the length of the skewer, until you have an even gap between the slices forming the spiral. Melt the butter and brush it all over the potato. In a medium bowl, combine parmesan cheese, black pepper, garlic powder, paprika, and salt. Place the skewered potato over the bowl and shovel the mixture all over the potato until it is entirely coated. Rest potatoes on a baking sheet so that it is hovering over the bottom of the sheet. Bake for 25-30 minutes, or until nicely browned. Garnish with additional parmesan and parsley. Allow to cool for 5 minutes. Serve warm and enjoy!
