FRESH PRAWN SPRING ROLL I have received this healthy recipe from my dear Vietnamese friend. As the dish is so light, you can have as many as you wish! Vietnamese recipe Serving size: 8 persons Preparation time: 30 minutes INGREDIENTS 16 rice paper sheets 32 medium peeled cooked prawns 80g vermicelli noodles 16 small lettuce-leaves 1 cucumber 1 carrot 16 large fresh mint-leaves 16 sprigs fresh coriander 16 sprigs fresh chives Dipping sauce 100 ml hoisin sauce 2 tablespoons sugar 20g minced cucumber 20g small thin striped carrot 10g minced peanut 2 chillies METHOD Boil the dried vermicelli noodles until softened, drain well, cool it and cut into about 8 cm long. Cut cucumber, carrot into 8 cm thin strips. Place the rice paper sheet on a plate, soften it with warm water. Place a mint leaf, two prawns, a lettuce leaf, a slice of cucumber, a slice of carrot, a sprig of coriander and a sprig of chives into rice paper. Fold in sides and roll up to enclose. Repeat for others paper with the same ingredients. Place the rolls on a tray with plastic wrap; cover and refrigerate until ready to serve. For the dipping sauce: mix hoisin sauce with some hot water, sugar, cool this and put minced cucumber, thin striped carrot, chilli (if required) and minced peanut in. Serve spring rolls with dipping sauce.

CREAMY MUSHROOM AND CHICKEN PASTA Serve 4 people Preparation: 15 minutes Cooking: 45 minutes Ingredients: 1 pack Pen pasta 6 medium mushrooms 4 Garlic cloves 3 Chicken drumsticks 1 small celery stick, chopped 150 gr grated Mozzarella cheese 3 table spoon grated parmesan cheese 4 table spoon Mayonnaise 3 table spoon melted butter 1 tea spoon turmeric 1 tea spoon coriander powder 2 cup water Cook the chicken with garlics, celery, water and turmeric. Keep half a cup of chicken broth after cooking. Separate the chicken from broth and shred the cooked chicken finely. Bring to the boil a pot of water and cook the pasta and rinse. Slice mushrooms and sauté with butter on medium heat for 5-7 minutes. Sauce: mix the chicken broth with mayonnaise and coriander and put aside. In an oven proof dish pour 1 table spoon of the sauce; layer with the pasta, chicken pieces, mushroom, mozzarella cheese and 2 spoon of the sauce. Repeat the process and finish with the parmesan cheese. Make sure you spread the sauce over each layer. Cook the pasta dish in the oven with 180˚C until the colour of cheese changes slightly.

Charcoal Chicken with Piri Piri Sauce Cuisine: Portuguese Prep time: 50 min(s) Cooking time: 30 min(s) Servings: Serves 6 Created by Luis Fernandes Ingredients 1 large chicken 8 garlic cloves, crushed juice of 2 lemons 1 tsp bay leaf powder 2 tsp sweet paprika 80 ml scotch whisky 2 tbsp butter, softened rock salt Piri piri sauce 10–12 small red chillies, finely chopped (or less to taste) pinch of salt juice of ½ lemon 100 ml olive oil 2 tbsp garlic powder (fresh garlic makes the sauce too runny) Preparation Trim the chicken of excess fat. Use a sharp knife or kitchen scissors to cut the chicken through the breastbone. Open the chicken out, turn over and flatten it by pressing down on the backbone. Make a small cut under each wing to help the chicken flatten further. Make several slashes in the flesh with a sharp knife to allow the flavours of the marinade to get in and the fat to drain out. Prick the chicken all over with a fork. Combine the garlic, lemon juice, bay leaf powder, paprika, whisky and butter, mixing well. Brush the chicken on both sides with the mixture and sprinkle with rock salt. Cover and marinate in the refrigerator for 30–45 minutes. Mix the piri piri ingredients into a thickish sauce. Cook the chicken on a hot charcoal barbecue, turning frequently and basting continuously with the leftover marinade, for 30 minutes or until golden brown. Cut the chicken into pieces and brush with the piri piri sauce.
