Forget the mayo-laden crap. Make red cabbage slaw: Thinly slice half a medium red cabbage. Toss with 4 medium shredded carrots (just use a vegetable peeler), 3 sliced scallions, a big handful of cilantro, 1 seeded and diced jalapeño, a few good shakes of sesame seeds, the juice from 1 lime, and 1/4 cup rice wine vinegar. Add sugar and salt to taste. Use your hands to mix well. For best flavor, let in chill in the fridge overnight. Adjust the seasoning the next day, if needed. Makes enough to feed a whole mess o' people.
