🍌 PEANUT BUTTER & BANANA MUFFINS 🍌 Oh! Don't mind if I absolutely do. I love my healthy food and fitness and I love my baking too. It's what drew me to become a chef and the passion for it is still very much there. I had a shop in Covent Garden which sold cakes and cupcakes but had to let it go sadly due to rising rents. I miss going in to the shop kitchen and being hit by that intoxicating smell of hundreds of cakes baking and wanted to make sure I get some baked goodies into my new book with a healthier theme. These bad boys have quite ALOT of peanut butter in them but they contain no other butter. They are made by a practically bung it all in a bowl method so perfect for a quick baking fix. ❤️ J U S T D O I T ❤️ When I switched careers from being a model to a chef (with my then young daughter in tow and a lot of failed attempts at other careers along the way) pretty much everyone in my life was sceptical about what I was doing. People would question my actions wondering why I would leave a career such as that to do something else. I did it because I knew that I was supposed to be doing something else, there was a voice inside of me saying I had to make a change, a niggle, a gut feeling. Maybe changing jobs is not something which you feel you want to do but is there anything in your life which you know you want to Change but are afraid too? Fear has held me back so many times and had me clinging to situations/people/Etc that I really new I should let go of... But if you can find the strength with the help of good family and friends to make that change you have been wanting to for a while and make a decision out of trust and faith rather than fear, things so often fall into place... We have been potty training this week and so far so good ~ except for the big wet patch that's conviniently on my side of the bed after our morning cuddle :) Nothing a bowl of home 🏡 made coconut yogurt & rawnola won't sort out! ♥ #Rawnola 300 grams of pre - soaked sprouted buckwheat 1 big grated apple or 2 small Maple 🍁 agave or honey 🍯 - Your choice (I like using maple for mine) Then lots of topping options like: Nuts, seeds, dried fruit, cinnamon, cacao nibs you name it! Blend the buckwheat, apple 🍎 and sweetener together not until smooth but a thick mixture. You can even pulse it to be sure ! Spread it on a dehydratedor tray or a baking paper for conventional oven. Once spread top it off with raisins, nuts, seeds, I like it with cinnamon or cacao nibs. K E D G E R E E (L O W C A R B V E R S I O N) 🍴🌟such an easy dish to make and very very quick. Poach two smoked haddock fillets in some water with some curry powder. At the same time hard boil and egg. Once cooked remove from the heat and set aside. Blitz a quarter of a cauliflower with some salt and pepper and then add some turmeric about 1tsp and mix together. Tip this in to a bowl and add the fish then chop p some spring onions, parsley and coriander and sprinkle on top along with the sliced hard boiled egg and then serve. This recipe serves 1.
