Chicken loaf with curry Ingredients (8 servings): - 400 g chicken breast - 1 onion, chopped - 1 clove of garlic, crushed - 10 ml olive oil - 180 g wholemeal or spelt flour (or other flour you like) - 1 sachet of dried yeast - 3 eggs - 100 g ricotta - 1 tbsp parmesan, (ground) - 1 tbsp curry powder - 2 tbsps basil, chopped - 2 tbsps parsley, chopped - fresh black pepper and salt Directions: - Cut the chicken breast in little pieces and put them in a bowl. - Add the olive oil, onion, garlic, basil, parsley, fresh black pepper and salt. - Mix the flour and the dried yeast, eggs and curry powder. Stir. - Add the ricotta and parmesan and stir again. - Add the chicken and the marinade. - Put the mixture in a silicon cake tin. - Put the cake in a pre-heated oven at 180°C for 40 minutes. - Let cool for several minutes before demoulding. Cajun Chicken Stuffed With Pepper Jack Cheese & Spinach Recipe from Metabolic Cookbook: http://bit.do/FatBurningRecipes 1 lb chicken breast, boneless and skinless 4 ounces monterey jack pepper cheese, shredded (you can use up to 6 oz) 1 cup frozen spinach, thawed and drained (you can also use fresh cooked spinach) 2 tablespoons vegetable oil 2 tablespoons cajun seasoning ( I use 1/8 tsp) 1 tablespoon breadcrumbs sea salt, to taste fresh ground black pepper, to taste Preheat oven to 350 degrees. Flatten the chicken to 1/4-inch thickness. In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper. Combine the Cajun seasoning and breadcrumbs together in a small bowl. Spoon about 1/4 c of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten with toothpicks. Brush each chicken breast with the vegetable oil. Sprinkle the Cajun seasoning mixture evenly over all. Sprinkle any remaining spinach and cheese on top of chicken (optional). Place the chicken seam-side down onto a tin foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through. Remove the toothpicks before serving! Cauliflower Buffalo Bites Recipe Ingredients 1 head of cauliflower, washed and broken up into small florets 1 tsp. extra virgin olive oil 1 tsp. garlic powder 1 tsp. paprika 1 tsp. chili powder ½ tsp. kosher salt 2 tbsp. of your favorite hot wing sauce Directions Pre heat oven to 425 Toss cauliflower with olive oil and distribute evenly. Combine garlic powder, paprika, chili powder, and salt in a small bowl. Toss spice mixture over cauliflower and mix well, making sure all the cauliflower is coated in the spices. Spread cauliflower out on a rimmed baking sheet a roast for 20 minutes. Toss with wing sauce and serve with your favorite blue cheese dressing for dipping. Enjoy! Makes about 2 cups.
