Whether you're looking to impress the in-laws, complement your dinner with the perfect dessert, or you just have a sweet tooth and you're looking for a quick way to satisfy it, this peach cobbler recipe is sure to impress and satisfy, and it goes well with most any meal, any time of the year. All you will need to get started are just 4 or 5 simple ingredients: 1 large can diced peaches 1 box Jiffy Golden/Yellow cake mix 1 stick salted butter 1/2 cup of sugar (optional) or Cinnamon Sugar (optional) Steps: 1. Pre-heat oven to 400 degrees 2. Melt the butter then pour the butter, sugar (optional), can of peaches (with juice) into a bowl and mix together 3. Pour the bowl of mix ingredients in a small baking dish 4. Evenly spread box of Jiffy cake mix over peaches and sprinkle cinnamon sugar on top. 5. Bake at 400 degrees for 3o minutes, or until the color is a dark golden brown, and bubbly in the middle. Tips: if you like it real sweet add the sugar & cinnamon sugar or if not just use one or the other depending on how you like it. I add sugar and I lightly sprinkle a little cinnamon on top. Enjoy! Peach Butter Pound Cake For the Cake: 1 Cup sugar 2 Eggs 1 Stick unsalted butter, at room temperature 1 Teaspoon vanilla 1/4 Cup buttermilk Zest of 1 lemon 1 1/2 Cups all purpose flour plus 1/4 cup 1 Teaspoon baking powder 1/4 Teaspoon baking soda 1 Teaspoon salt 4 Peaches Peach Glaze: 1/2 Cup confectioners sugar 2 Tablespoons peach nectar Pinch of salt To prepare the peaches, bring a large pot of water to a boil and submerge the peaches fully for one minute. Remove with a slotted spoon and place them in ice water to cool. The peel should come off easy with your fingers. Remove the pits, slice into bite size pieces and mix with the 1/4 cup of flour. Using either a stand mixer or hand mixer, add the sugar and eggs to a large bowl and cream together for a couple of minutes until the eggs are a light golden color. Beat in the butter until smooth. Add the vanilla, lemon zest and buttermilk and mix thoroughly. In a separate bowl, sift together the 1 1/2 cups of flour, salt, baking soda and baking powder. Add the flour mixture into the egg batter and mix. Add the peaches and stir just until combined. Butter and flour an 8 or 10 cup bundt pan and pour in the batter. Bake in a pre-heated 350 degree oven for 50 - 60 minutes, until a cake tester comes out clean. Allow to cool thoroughly before removing from the pan. Make the glaze by whisking together the powdered sugar and peach nectar until thoroughly combined and spoon it over the cooled cake. Makes approximately 8 - 10 servings.

LEMON SUNSHINE ZUCCHINI BUNDT CAKE Ingredients: 1 + 1/2 sticks (12 tablespoons) unsalted butter, melted, plus more for pan 2 + 1/2 cups all-purpose flour, plus more for pan 2 + 1/2 teaspoons baking powder 1 teaspoon ground cinnamon 1 teaspoon coarse salt 3 cups shredded zucchini (about 2 medium zucchini - 8 ounces each) 3 large eggs 1 + 1/2 cups granulated sugar 1 teaspoon vanilla extract 2 teaspoons lemon zest, just the yellow - not the pith 1 tablespoon fresh squeezed lemon juice Glaze: 1 + 1/2 cups confectioners' sugar, sifted 1 - 2 tablespoons fresh squeezed lemon juice lemon zest to garnish the top, optional Instructions: Preheat oven to 325 degrees F. Grease a 6-cup bundt pan with butter and dust with flour. In a large bowl whisk together flour, baking powder, cinnamon and 1 teaspoon salt. Grate the zucchini on the large holes of a box grater then wring out most but not all of the water by placing it in a clean kitchen towel and twisting it. Stir together the eggs and sugar, then stir in the melted butter, zucchini, vanilla, lemon zest and juice. Stir in the flour mixture. Transfer batter to the pan and bake about 1 hour or until a toothpick inserted in the center comes out clean. Transfer pan to a wire rack and let cool 15 minutes. Run a paring knife around the edges then turn out onto wire rack or cake dish and allow to cool completely. Once cooled make the glaze by whisking the sugar and 1 tablespoon lemon juice, add more if needed. The glaze should be thick but will run off the spoon when lifted. Top the cake with spoonfuls of glaze then sprinkle with lemon zest. Refrigerate leftovers.
