Pistachio Pancakes with Haupia Sauce Tonight was breakfast for dinner night. I was thinking that Pistachio Pancakes might be yummy and my next thought was that a nice coconutty haupia sauce would be good with it. I was right. This is pretty simple to make. It is, of course, on the sweeter side, so a side of salty bacon would be perfect with it! Start with making the haupia sauce, so it can cool while you cook the pancakes. You will probably have lots of sauce left over, so feel free to cut the recipe in half. The pancake recipe makes about 12-14 6-inch pancakes. Haupia Sauce: 1 can (13.5 oz) coconut milk 1/4 cup sugar 1 Tablespoon cornstarch Combine all ingredients in a sauce pan and cook over medium heat until the sugar is melted and it begins to thicken. Turn off heat and let the sauce cool. Pistachio Pancakes: 2 cups flour 2 Tablespoons baking powder 1 (3 oz.) box Instant Pistachio Pudding 1/2 teaspoon salt 2 Tablespoons sugar 2 cups milk 2 eggs beaten 1/4 cup butter, melted 5-10 drops of green food coloring, optional whipped cream for topping, optional chopped pistachios for topping, optional Melt the butter and set aside to cool. In a large bowl, combine all dry ingredients and mix to combine. In a separate bowl, mix together the eggs, milk, and melted butter. Add to dry ingredients and stir until smooth. Add food coloring, optional, and stir. Heat your frying pan on medium/high heat. I usually spray my pan with some cooking spray first. I usually use a large ice cream scoop to pour my pancake batter into the pan. You can pour it or use a measuring cup. Cook pancake until the sides look dry and bubbles appear all over the top of the batter, flip and cook until nice and fluffy. Remove to serving plate and drizzle on the haupia sauce. Top with whipped cream and chopped pistachios, optional.
