    For the Crust and Crumb Topping:
    ¾ cup avocado oil
    1/4 cup date sugar
    2 tbs maple syrup
    1 cups spelt flour
    ¾ cup almond flour
    1 1/2 cups quick oats
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    For the Date Filling:
    2 cups chopped pitted dates
    1 1/2 cups water
    1 teaspoon vanilla extract
    Prepare the Filling:
    Add the chopped dates and water to a medium saucepan over medium heat.
    Simmer while stirring occasionally until the dates break down and form a thick paste (about 10–15 minutes).
    Remove from heat, stir in vanilla, and let cool.
    Make the Crust and Topping:
    In a large mixing bowl, beat together the coconut oil and coconut sugar until smooth and creamy.
    Add the flour, oats, baking soda, and salt. Mix until crumbly.
    Assemble:
    Preheat the oven to 350°F (175°C).
    Press half of the crumb mixture firmly into the bottom of a greased or parchment-lined 9x13-inch baking pan.

    1 cup heavy whipping cream
    2tbsps icing sugar
    Vanilla
    Strawberries, raspberries, blueberries and blackberries (I used lots of them, I like it fruity)
    10 mini Meringues from @traderjoes

    Beat the cream until stiff. Layer the fruit and the meringues, top with the cream. Continue to do this until all the mixture is finished. Enjoy 😋

    Wracking my brains to make sweets with good sugars. Here’s an old one from my grandma. Use all dried fruit.
    👉Apricots
    👉Dates
    👉Raisins
    👉A little date sugar
    👉A little rise water

    Blend in the food processor until you get a paste. Divide into small balls.
    👉Roll in a combination of date sugars and almond flour

    I went “Flan-ing” and made this Venezuelan Quesillo! It’s a traditional dish made a little differently than classic flan. Typically, it’s prepared in a special baking tin and cooked in a “Bain Marie” (water bath).
    Ingredients:
    • 1 can condensed milk
    • 1 can milk (use the empty condensed milk can to measure)
    • 4 eggs
    • 1/2 tsp vanilla extract
    • 3 tbsp raw sugar
    • 3 tbsp water
    Instructions:
    • Boil the sugar and water together until it turns caramel brown.
    • Pour the caramel into a greased oven-safe dish and let it cool
    • Blend the condensed milk, regular milk, eggs, and vanilla in a blender until smooth.
    • Pour the mixture into the caramel-lined dish.
    • Place the dish in a Bain Marie (a larger pan filled with hot water).
    • Bake at 350°F (175°C) for about 45 minutes, or until a knife inserted in the center comes out clean.
    • Let the Quesillo cool, then serve with dulce de leche.
