Apicius, a popular Roman chef, produced an ancient cookbook that is still used today. In this Storyboard, I have shared the history of food in Ancient Rome, and recipes so you can feast like an emperor.

Maize was the dominant crop. Shelled corn soaked in an alkali solution, was ground into a flour. Then the mixture was shaped into a flat bread, and fried on a griddle. The tortilla was born. Other crops included beans, squash, avocados, chilies, tomatoes, nuts, sweet potatoes, and cactuses. In this Storyboard I will share some of the ancient food traditions and recipes.

Janette SpeyerStoryboardWhat is Kataifi?Curated byJanette SpeyerKataifi, Kanafeh, Kadaif is a Middle Eastern pastry. This dough is similar to shredded wheat and it bakes into a crispy texture. Kataifi is typically made with warm cheese or nuts. It can be used in a variety of ways but mostly sweet dishes. I remember my grandma making pistachio desserts using this delicate dough drenched in syrup. I have shared some of my childhood and other recipes in this Storyboard.
