Spaghetti ‘bolognaise’ Note: - Instead of spagetti/pasta you can use julliened carrots or green beans - I didn’t use much spaghetti for each serving to keep a good nutritional balance. You can change this accordingly your own needs. Ingredients (4 servings): Sauce: - 1 onions (130 g) - 1 bell peppers /paprika (165 g) - 1/ zucchini (80 g) - 1 cloves of garlic - 100 g mushrooms - 250 g tomato sauce (natural), off course you can use fresh tomatoes - 35 g concentrated tomato paste - spices you like and depending for what you are going to use the sauce. I choose for a spaghetti mix. - 5 g olive oil - 500 g minced beef (very low fat) - 140 g wholemeal spaghetti Directions: Sauce: - Wash, clean and chop all vegetables - In a large saucepan heat oil over medium heat. Saute onion, garlic, bell peppers, zucchini and mushrooms for a few minutes. - Add the tomato sauce, tomato paste and spices - Bring to a boil, reduce heat to low, cover and simmer, stirring occasionally for about 30 minutes - Heat up a saucepan over high heat and add the minced beef. Roasted sweet potatoes with cinnamon, veggies and chicken Ingredients (2 servings): - 300 g sweet potatoes - 250 g chicken (filet/breast) - 200 g red onion - 3 cloves of garlic - cinnamon - chicken spices - 200 g broccoli - 150 g carrots Directions: - Pre heat the oven at 180°C - wash the sweet potatoes and cut them in even pieces (I didn’t peel them) - peel the red onion and cut in to big pieces - peel the gloves of garlic and cut them in to little pieces - put baking paper on a baking sheet. Put on the baking paper the sweet potatoes, red onion and garlic. Sprinkle all of this with cinnamon. - Bake in the oven for 20 minutes. - Turn around - Bake the other side for another 20 minutes - I cleaned and cut the broccoli and carrots and put them in the steamer.
