This is one of my favorite recipes! My version of Pad Thai. 1 Box rice noodles 1 Block firm tofu 1 head brocolli 1 Small bag of cole slaw/shredded cabbage 1 Red pepper Sauce: 2 T Peanut butter 2 T Soy sauce or Tamari 1 t Sriracha chili sauce 1 t Maple syrup 1/2 t ginger powder Mix and set aside. Sear cubed tofu on high heat. Add chopped veggies, cook, then add cooked rice noodles, pour sauce over and mix. Salt and pepper to taste. Garnish with lime, cilantro, and crushed peanuts. You can use different kinds of veggies. Cooking rice noodles- don't over cook, 5 min should be fine. Rinse well with cold water and seperate.
