Omg wow😍😍🍤🍝 by @the.colors.of.yum - Recipe by @dinnerthendessert CPK's Kung Pao Chicken Spaghetti - Total cheat treat😝 1 cup chicken stock 2 tablespoons cornstarch 3/4 cup soy sauce 1/2 cup sherry 3 tablespoons chili paste with garlic 1/4 cup sugar 2 tbsp each red wine vinegar, sesame oil, and cornstarch 2 egg whites 1/2 teaspoon salt 1 lb spaghetti 1/4 cup olive oil, plus 1 lb boneless skinless chicken breast, cut in ¾-inch cubes 10 -15 whole chinese dried red chili peppers (don't eat these, they are for color and heat) 1 cup unsalted dry roasted peanuts 1?4 cup minced garlic 3 cups coarsely-chopped scallions, greens and whites Instructions To Make the Kung Pao Sauce: In a saucepan, whisk together the chicken stock and 2 tablespoons cornstarch until the cornstarch is fully dissolved. Stir in the soy sauce, sherry, chili paste, sugar, red wine vinegar and sesame oil and bring to a boil. Reduce the heat and simmer until the sauce is thick enough to coat the back of a spoon (about 20 minutes). To Make Egg White-Cornstarch Mixture: In a mixing bowl, use a whisk to stir together the 2 egg whites, 2 tablespooons cornstarch, and ½ teaspoon salt until blended but not frothy. To Prepare the Pasta: Bring a large pot of salted water to a rapid boil. Add the pasta and cook a minute shy of al dente. To Bring the Dish Together: In a large nonstick frying pan over medium-high heat, heat the ¼ cup olive oil for about 1 minute. Add the chicken to the Egg White-Cornstarch Mixture and mix. As carefully as you can, add the chicken and egg white mixture to the pan in one large pancake shape. Cook until the egg mixture sets. Using a large spatula, carefully flip it over then with a wooden spoon, gently separate the pieces. As soon as they darken in color (about a minute) stir in tin the garlic and scallions. Let the garlic and scallions cook for about 30 seconds, add the Kung Pao Sauce and toss and stir to coat the ingredients. Add in the cooked and drained pasta and combine with the sauce. Add in the Chinese peppers and roasted peanuts into the bowl.

CREAMY TOMATO AND SPINACH PASTA by @budgetbytes Check out @budgetbytes Serves: 4 INGREDIENTS ½ lb. penne pasta 1 small onion 2 cloves garlic 1 Tbsp olive oil 1 (15 oz.) can diced tomatoes ½ tsp dried oregano ½ tsp dried basil pinch red pepper flakes (optional) ½ tsp salt freshly cracked pepper to taste 2 Tbsp tomato paste 2 oz. cream cheese ¼ cup grated Parmesan ½ (9 oz.) bag fresh spinach INSTRUCTIONS Bring a large pot of water to a boil over high heat. Add the pasta and cook until tender (7-10) minutes. Drain the pasta in a colander. While waiting for the pasta to cook, dice the onion and mince the garlic. Cook both in a large skillet with the olive oil over medium-low heat until softened and transparent (about 5 minutes). Add the diced tomatoes (with juices), oregano, basil, red pepper flakes, salt, and some freshly cracked pepper to the skillet with the onions and garlic. Stir to combine. Add the tomato paste and a ½ cup of water to the skillet and stir until the tomato paste is dissolved into the sauce. Turn the heat down to low. Cut the cream cheese into a few pieces and then add them to the skillet with the tomato sauce. Use a whisk to stir the sauce until the cream cheese has fully melted in and the sauce is creamy. Add half of the Parmesan to the skillet and whisk until it is melted in. Add the remainder of the parmesan and whisk until melted in again. Add the fresh spinach and gently stir it into the sauce until it has wilted (3-5 minutes). Add the pasta and stir until it is well coated in the creamy tomato sauce. Taste and adjust the salt and pepper as needed. Serve warm.

Sundried Tomato, Spinach, and Cheese Stuffed Chicken By @yammiesnoshery❤️@yammiesnoshery Two large chicken breasts 3/4 cup Sun Dried Tomato Vinaigrette Dressing (salt and pepper and olive oil work too) 1/2 cup sundried tomatoes 1/2 cup roughly chopped spinach 1/2 cup feta cheese 1/2 cup mozzarella cheese Marinade the chicken breasts in the dressing for a few hours. With a large sharp knife, carefully cut the chicken breasts like hot dog buns. Don't cut all the way through. Open the chicken breasts up where you cut them and layer on the remaining ingredients. Stick a couple of toothpicks in near the opening to keep it all together. Heat up a pan (I used a cast iron skillet) and sear the meat on both sides. You can lower the heat and continue cooking the meat on the stove until it's done or, if you're using a cast iron skillet, you can put the pan in the oven at about 375ºF. You could also just completely cook it in the oven on a baking sheet if you don't feel like searing it. Just make sure you cook it until the center reaches 165ºF on a thermometer.

Fast & Easy 1-Pan Shrimp Dinner 🍤 {a Balanced, Seriously Delicious meal on the table within 30 minutes!} You have to try THIS recipe! It has quickly become one of our family favorites! You can even sub riced cauliflower for a paleo version😋 Serves 4 Ingredients: 1 lb large shrimp, peeled and deveined-tails on 1 Tbsp extra virgin olive, or avocado oil 1 small yellow onion, diced 2 celery spears, chopped on diagonal 2 cloves garlic, minced 1 green bell pepper, diced 2 cups cooked brown rice (I cooked the rice in organic chicken broth, for a little extra flavor😋) ½ cup frozen organic baby peas 1 tsp cumin 1 tsp smoked paprika sea salt and pepper to taste chopped parsley for garish Instructions: Toss shrimp with cumin, smoked paprika, sea salt and pepper. Heat oil in a large skillet. When oil is very hot add shrimp and cook for two minutes on each side, until pink. Remove shrimp from skillet and set aside for a minute. Add diced onion, celery, and bell pepper to skillet and saute until onion is translucent. Add garlic for another minute. Add cooked brown rice to the vegetable skillet, & saute for a minute, until hot. Add frozen peas and cook for a couple more minutes until peas are no longer frozen. By @Runwithspoons, visit the blog runningwithsponns, link in the bio @Runwithspoons . 1 cup plain Greek yogurt 2 ripe bananas 2 eggs 2 cups rolled oats (old fashioned or quick) ¼ cup brown sugar 1½ tsp. baking powder ½ tsp. baking soda ½ cup chocolate chips, mini or regular Preheat oven to 400F and prepare a muffin pan by spraying cavities with cooking spray or lining them with paper liners**. Set aside. Add all ingredients except for chocolate chips to a blender or food processor and process on high until oats are broken down and batter is smooth and creamy. Stir in chocolate chips by hand. Pour batter into prepared muffin pan, filling each cavity until it is about ¾ full. Optional: sprinkle a few chocolate chips over the top of each muffin. Bake for 15-20 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing. By @pbandp❤️check the yummy blog for more recipes, link in bio @pbandp 1 lbs. boneless chicken breast black pepper ¼ cup mozzarella cheese, shredded,divided 1 tsp. butter ¼ cup Franks Hot Sauce ¼ tsp. celery salt Preheat grill to medium low heat. Butter fly your chicken, by cutting it horizontally. Do not cut all the way through. Sprinkle the inside of the chicken with pepper. Evenly top the the chicken with cheese and fold over the chicken to close it. It should look like the chicken breast before you cut it. In a microwave safe bowl (I used a pyrex measuring cup) melt the butter for 8 seconds. Stir in hot sauce and celery salt. Brush one side of the chicken with hot sauce mixture and place the hot sauce size down on the grill. Brush more hot sauce over top of chicken. Cook for about 7 minutes. Flip the chicken and brush on remaining hot sauce and cook until no longer pink; about 5 minutes more. Serve with a side salad, celery, carrots and ranch dressing if desired.
