Pomegranate Aperitif

Saba is wine-grape juice that’s been reduced until syrupy and concentrated. If you can’t find it, use a few drops of aged balsamic vinegar.

Whisk pomegranate juice and saba in a large pitcher, then stir in Lillet and bitters. Pour into rocks glasses filled with ice; top off with club soda.
