I'm so excited to announce that most of my appetite is back!! Yay! lol Anyways, not only is today #FlexBowlFridays with @FamFitFood and #TeamFBF, but it's also the first day of #FallFoodFridays hosted by @TheFitBaldMan!! So...I created an easy fall treat and a little #flexbowl for both of my good friends! ♥ ★Apple Pie for One★ with candied walnuts and a cinnamon/nutmeg whip cream. After not eating enough for almost 2 days, this hit the spot! So comforting on chilly evenings!! Ingredients: 1 apple (I used gala), 1/3C raw oats, 3TBL chopped walnuts, 1TBL granulated sugar, 1TBL grassfed butter, 1.5tsp cinnamon, 1tsp honey, 2TBL real whipping cream, .5tsp nutmeg** Preheat oven to 375*. Cut apple in half and remove core. With a food processor, or blender, combine oats, 2TBL walnuts, sweetener, and 1tsp cinnamon. Pulse only about 2-4 times depending how ground you want the nuts and oats. I like them still kind of whole. Cut in the butter, by pulsing only 3-4 times. Press down into the cavity in the apple and spray top with cooking spray. Place in an oven proof pan with 2TBL water on the bottom to prevent from sticking and burning. Bake for approx. 25-35 minutes, or until the apple is soft. While that is baking, mix remaining walnuts & cinnamon with the honey. Add to the oven with apple and bake for approx. 8-10 minutes. Mix whipping cream with nutmeg & remaining cinnamon. Allow apples to cool slightly, top with whip cream, nuts and enjoy the warmth! ♥
