Super-easy kale cheddar frittata: Preheat oven to 350 F. In a large oven-safe skillet, heat 2 Tbsp butter over medium till melted. Add 4 cups chopped kale and sauté till wilted, 3 to 5 minutes. Season with salt and pepper. Add 8 beaten whole eggs and cook until the eggs around the outside edge begin to set. Scatter 1/2 cup grated cheddar atop. Transfer the skillet to the oven and bake until the eggs completely set, 5 to 7 minutes. Carefully remove the pan (use an oven mitt, bub), allow to cool slightly, and then transfer the frittata to a cutting board to slice and serve. Top with paprika, fresh herbs, or pink sea salt (as shown here).
