I went for a green vibe with these wraps. I could’ve taken it a step further and had broccoli rice, but I didn’t want to have to clean my food processor as I’d already piled up some dishes from making cake for breakfast. (I know, healthy!)

Makes: 2 wraps
Preparation time: 20 minutes
Cooking time: 25 minutes

Ingredients

80g brown rice
1 tbsp oil
80g cooked green lentils
50g courgette, diced
50g green cabbage, thinly sliced
1/2 green pepper, diced
juice of half a lemon
juice of half a lime
handful of spinach
a chunk of cucumber, diced
a few pumpkin seeds
2 large wraps

Instructions

Cook the rice according to the packet’s instructions, then drain.
About 5 minutes before the rice is finished cooking, heat an oiled wok over medium heat. Add the lentils, courgette, cabbage and pepper. Stir-fry for 4-5 minutes until the veg has softened.
Add the rice and the juice of half a lemon and lime. Stir-fry for another minute.
Add the spinach, cucumber, pumpkin seeds and stir fry onto your wraps then roll up and serve.
