Pumpkin Pancakes Serving Size: 1 large Ingredients 2 eggs 1 egg white 1/4 cup pumpkin puree 1/2 tsp. cinnamon 1 tbsp. maple syrup Instructions Whisk together all the ingredients. Pour into a fry pan over medium high heat sprayed with cooking spray or use your favourite oil. Cook until bubbles and edges are cooked through. Carefully flip (it may fall apart slightly, that’s ok) and cooked on the other side. Serve with more pumpkin, yogurt, nuts and maple syrup.

Roasted red pepper dip from Monash University Ingredients: 2/3 cup of water 1/3 cup of quinoa grain 1⁄2 cup of goat’s feta cheese crumbled 1 tspn of sambal oelek 1⁄2 lemon, juiced 1 1⁄4 cup of roasted red peppers* 1⁄2 bunch of finely chopped chives sea salt and cracked pepper to season To roast your own peppers* To roast your own peppers, grill fresh red peppers with skin still on in the oven or over an open flame until the skin starts to shrivel and turn black. Turn over until the whole pepper has charred. Place in a bag and cool completely, allowing approximately 20 minutes. Remove the skin and rinse the peppers before use. Method: Preheat oven to 180C. Add the water and quinoa to a pan. Bring to the boil, cover and reduce to a simmer. Cook for approximately 15 minutes until it is light and the grain has opened. Cool completely and fluff gently with a fork. Puree the quinoa with half the goat’s cheese. Add the sambal oelek, lemon juice, red pepper and chives and season to taste. Process until the mix is smooth. Pour into a baking dish. Top with remaining goat’s cheese. Bake until the edges are beginning to brown. Serve warm with carrots and cucumber julienned and rice wafers.

Raspberry Fructose Friendly Christmas Friands (Gluten Free) Ingredients 100g butter 4 large egg whites 1/4 cup plus 2 1/2 teaspoons gluten free plain flour 1 cup pure icing sugar 2/3 cup almond meal 1 teaspoon of vanilla essence Grated rind of 1 orange 1 cup Raspberries (frozen or fresh) Extra icing sugar, for dusting Method Preheat oven to 375Fdegrees = 190 Cdegrees Grease six small muffin tins or non-stick oval Friand pans. Melt butter over low heat until golden brown and set aside to cool to lukewarm. In a medium bowl place egg whites Sift the flour almond meal and icing sugar into the egg whites and stir Add melted butter, orange rind and vanilla essence and combine well Place enough mixture to come up 3/4 of the tins and then place Raspberries in the centre of each mixture and gently give a little push under the mixture. Bake for 25 minutes or until springing to touch. Leave to cool in pan and then carefully remove and dust with icing sugar.
